Section XLVI: Kvass, Beer and Mead — Fermented Drinks and Historical Berry Kvass

Complete English translation of the historical introduction and notes in Section XLVI (kvass, beer and mead), with the complete original recipe index in English.

Complete historical chapter notes in English: The translated headings, introductory notes, proportions and methods below follow the printed Russian edition in their original sequence. The English recipes appear after these notes. Historical instructions are documentary material and must not be mistaken for current safety guidance.
Editorial medical and fermentation note: The 1901 claim that kvass treats tuberculosis is not established medical advice. Historical fermentation methods may omit modern sanitation, pressure and alcohol-safety precautions.

A. Kvass.

Note. The author argues that Russian kvass has every quality needed to be recognized not only as one of the healthiest and most nourishing drinks, but also as medicinal, particularly against consumption (tuberculosis).

B. Preparation of Moscow-Style Kvass.

Note. For Moscow-style kvass to succeed, the berries must be ripe and fresh; otherwise the drink will not taste good. In the countryside, where berries may be gathered without cost, these kvasses are described as the cheapest and most refreshing drinks. They are best made in bottles, since barrels and tubs may leak. Raspberry and strawberry kvass, however, are to be made only in tubs fitted with lids; according to the author, they must always be kept covered and closed in ice.

C. Beer.

D. Preparation of Mead.
