No. 3547 — Quick Beer

English historical translation of Molokhovets recipe No. 3547 from the 1901 Russian cookbook, retaining original methods and measures.

Mix 3 glasses malt and ¼ pound hops, rubbing the hops thoroughly with flour. Put the mixture into a pointed bag.

Hold the wide mouth of the bag under a boiling samovar tap, with a tub beneath its narrow, protected end. Let 12 bottles boiling water pass slowly through the bag with the samovar tap half open.

Cool the liquor in the tub to the warmth of fresh milk. Stir in 2 glasses good dark molasses and ½ glass of the best yeast.

After the beer has fermented, bottle, cork and keep in a cold place until drinking.

Historical editorial note: This historical recipe provides no modern fermentation or bottling-pressure controls.
