Soups and Broths in Russian Cooking Around 1901
A guide to consommé, borscht, spring vegetable soups and sterlet fish soup in Elena Molokhovets' original 1901 recipes.

The soups of late-nineteenth- and early-twentieth-century Russian cookbooks went far beyond cabbage soup and borscht. Molokhovets also described clear meat stocks, consommés, vegetable soups, and several forms of ukha, or fish soup.
Many distinctions lay in the liquid base, how the broth was clarified, and when each ingredient was introduced. A recipe might refer the reader to a separate chapter on stock rather than repeat the preparation. This is a guide to the historical source, not a set of newly tested modern recipes.
