Old Russian Baking: Kurnik, Drachena and Charlotte
Explore four different historical baked preparations in the 1901 Molokhovets cookbook, from layered kurnik to a bread-lined apple charlotte.

The broad category “baking” brings together dishes that were prepared in strikingly different ways. One might be baked as a single mass in a pan, another assembled as a high layered pie, and a third lined with slices of bread.
Historical oven instructions require interpretation: the shape of a pan, the size of a portion, and the equipment in use all affect the result. Where Molokhovets did not state a temperature in degrees, we do not invent one.
