No. 3545 — Moscow Rowanberry Kvass

English historical translation of Molokhovets recipe No. 3545 from the 1901 Russian cookbook, retaining original methods and measures.

The author calls this drink healthy when taken daily by the glass, but also quite bitter.

Prepare as for the other Moscow fruit kvasses, using rowanberries to fill no more than one-quarter of the bottle or barrel to avoid excessive bitterness.

Dilute with water and sweeten with sugar before drinking.

Historical editorial note: The source's daily health benefit is an unverified historical claim.
Original source: Read Russian recipe No. 3545. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
