No. 3548 — Homemade Beer

English historical translation of Molokhovets recipe No. 3548 from the 1901 Russian cookbook, retaining original methods and measures.

In a barrel mix ½ vedro barley malt with 2 vedros cold water and leave until the following morning.

Transfer to a cauldron, add one full teaspoon salt and simmer gently for two hours. Add ⅛ vedro, or 6 glasses, hops and boil another twenty minutes.

Strain into a barrel and cool, then add 1 cup fresh brewer's yeast and 1 cup molasses. Stir and leave until evening.

Bottle the beer but do not cork until the next day. The author says it is then ready and may be made stronger or sweeter to taste.

Historical editorial note: The period recipe lacks controlled fermentation duration, alcohol content or pressure-safe packaging instructions.
