No. 3551 — Beer from Young Pine Shoots
English historical translation of Molokhovets recipe No. 3551 from the 1901 Russian cookbook, retaining original methods and measures.
Cut young pine shoots 3–4 inches long into small pieces, simmer in water and strain through cloth.
For each vedro strained liquid add 2 pounds granulated sugar and cook until it thickens like thin molasses. The source stores this concentrate in a corked barrel in a cool, dry place, claiming it keeps as long as a year.
To make beer, the period recipe combines 2 bottles pine-shoot concentrate with 30 bottles water, boils for two hours and cools.
The liquid is poured into a wine barrel and left to ferment before bottling.
Historical editorial note: Pine species must be positively identified before food use, and the historic concentrate-storage and fermentation claims are not validated safety guidance.
