No. 3532 — Cranberry Kvass
English historical translation of Molokhovets recipe No. 3532 from the 1901 Russian cookbook, retaining original methods and measures.
For 18 bottles water use 3 pounds cranberries, sugar (the source ambiguously prints '3 to 3 pounds'), 2 zolotniks dry yeast and ¼ pound dark raisins.
Mash the cranberries, boil with 9 bottles water and strain. Repeat with the same berries and the remaining 9 bottles water, then strain again.
Combine the liquids, add sugar, bring to the boil and let cool. Dissolve the yeast in the liquid, stir and stand for a full day.
Bottle with 2–3 raisins in each, cork and leave for two or three days. The author estimates a cost of about 4 kopecks per bottle.
Historical editorial note: The printed sugar range is defective and should not be silently normalised. Historic sealed-bottle fermentation can cause pressure buildup.
