No. 3550 — Historical Remedy for Sour Beer
English historical translation of Molokhovets recipe No. 3550 from the 1901 Russian cookbook, retaining original methods and measures.
The author suggests adding fresh unheated honey if beer begins to turn sour, at 4 pounds honey per 10 vedros beer.
The honey is first dissolved in several glasses beer, then mixed into the remainder.
Historical editorial note: Adding honey cannot make spoiled or microbiologically unsafe beer safe to drink. This is a historical claim, not a valid remedy.
