No. 3783 — Orangeade Concentrate

English historical translation of Molokhovets recipe No. 3783 from the 1901 Russian cookbook, retaining original methods and measures.

Take 8 oranges, remove their peels for candying by recipes Nos. 3781–3782, divide the fruit and remove the pips.

Add 2 more oranges sliced with their skins, also removing all pips.

Place all 10 oranges in a stone bowl with 5 pounds fine sugar. Crush with a wooden pestle until a fairly liquid mixture forms.

Transfer to a glass jar and cover with animal bladder. Use about one small spoonful concentrate per glass drinking water.

Other orange preparations cited include preserve No. 3276, cider No. 3343, orange wine No. 3449, ratafia No. 3475, liqueur No. 3481 and orange sugar honey No. 3556.

Historical editorial note: Uncooked citrus concentrate stored under a historic covering has no validated shelf-life specification.
