No. 3343 — Orange Cider for Tea

English historical translation of Molokhovets recipe No. 3343 from the 1901 Russian cookbook, retaining original methods and measures.

Take 4 oranges for 1 pound sugar. Rub the zest into the sugar, pound, and combine with squeezed and strained juice.

The following day boil three times. When done add 1 teaspoon 'lemon salt' (the historic name is retained) and strain into bottles.

The source also offers a proportion of 1½ pounds sugar for 2 glasses juice.

Historical editorial note: The exact historic ingredient called 'lemon salt' is not specified further in this entry; modern food-grade substitutions should not be assumed without identification.
Original source: Read Russian recipe No. 3343. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
