No. 3449 — Apelsinnik: Orange Wine Drink
English historical translation of Molokhovets recipe No. 3449 from the 1901 Russian cookbook, retaining original methods and measures.
For every bottle light white wine of any kind take 2 oranges chopped with their peel and 3 tablespoons finely pounded refined sugar.
Discard all orange seeds, put everything into a large bottle, cork, seal with resin and bury to the neck in damp sand in a cellar.
After twelve days, strain and pour into smaller bottles, sealing them. For a very sweet drink the author doubles or triples the sugar.
Historical editorial note: The stated cellar-storage method is archival and does not establish a safe modern shelf life.
