No. 2629 — Cold Rice with Almond Milk

English historical translation of Molokhovets recipe No. 2629 from the 1901 Russian cookbook, retaining original methods and measures.

Boil 1⅓ glasses of rice in water, drain in a sieve and rinse with cold water. Once drained, transfer to a serving dish and mix with sugar and cinnamon. When serving, pour over almond milk No. 360 and garnish with fruit preserves.

Raisins may also be added when the rice is almost cooked and simmered with it until ready. Offer raspberry or cherry preserves separately.

To provide

¼ glass of sugar and cinnamon.

½–1 glass of good raisins.

For the almond milk.

¾ glass of sweet almonds and 4 bitter almonds.
