No. 360 — Pancake-Wrapped Small Pies with Beef Filling

English editorial translation of Molokhovets recipe No. 360 from the 1901 Russian cookbook, with historical measures, method and source.

Fry thin pancakes as described in the preceding general note, browning only one side.

For the filling, finely chop one Russian pound of raw, roasted or boiled beef or veal. Fry one finely chopped onion in one spoonful of butter, then add the meat and fry lightly.

Stir in two or three finely chopped hard-boiled eggs, salt, a little allspice and dill.

Spread one spoonful of filling over the browned side of each pancake, roll into tubes and finish cooking as in the general note.

To provide

Pancakes: 3 glasses of milk, 2 glasses of flour

¾ teaspoon of salt and 2 eggs or 2 yolks

⅛ Russian pound of bacon or kidney fat and ¼ pound of butter

Filling: 1 Russian pound of beef, 1 spoonful of butter and 1 onion

2–3 eggs, salt, pepper and dill

Fresh parsley and ¼ pound of butter or ½ pound of frying fat

Historical editorial note: The raw meat option in the original requires current food-safety practices.
