No. 983 — Cold Smoked Boar's Head for Easter
English historical translation of Molokhovets recipe No. 983 from the 1901 Russian cookbook, retaining original methods and measures.
Choose the best-looking smoked head of an old boar, clean it and boil as for smoked ham, No. 980.
Place it on a serving dish and decorate the ears and snout with artfully cut white paper and greenery.
Historical editorial note: The head is traditionally served cold at Easter, according to the original. The old cooking method is historical, not contemporary safety advice.
Original source: Read Russian recipe No. 983. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
