No. 874 — Fried Minced Veal Patties with Sour-Cream Gravy

English historical translation of Molokhovets recipe No. 874 from the 1901 Russian cookbook, retaining original methods and measures.

Mince the veal finely and add kidney fat or suet, half a French white loaf soaked in milk and squeezed dry, ¼ teaspoon of mace, allspice, one egg and green onion.

Mince everything together very finely and shape small, round, flat patties. Brush with egg and coat with breadcrumbs made from the remaining crust.

Fry in hot butter in a saucepan on both sides, then transfer to a platter.

In the remaining butter, stir a teaspoon of flour into one or two glasses of sour cream. Bring to the boil, strain and pour over the patties.

Optionally, first fry one or two finely chopped onions in the butter to be used for the patties.
