No. 602 — Baked Potatoes
English historical translation of Molokhovets recipe No. 602 from the 1901 Russian cookbook, retaining original methods and measures.
Wash old potatoes thoroughly while leaving the skins on. Sprinkle the damp potatoes with salt and bake in the ashes of a Russian stove or in an oven, turning often so that they do not burn.
The author allows at least one hour. Serve for breakfast with salt and butter separately.
The amount is half to one osmushka, an old Russian unit of volume, depending on how many other breakfast dishes are served.
