No. 4119 — Uses for Bauch-Speck (Belly Bacon)
English historical translation of Molokhovets recipe No. 4119 from the 1901 Russian cookbook, retaining original methods and measures.
Remove the belly bacon, a large, oblong oval piece of thin lower fat weighing 12–20 pounds.
It may be salted and smoked, but the author prefers cutting it into portions and salting in a small barrel as described in recipe No. 4128.
