No. 4056 — Sturgeon Vesiga
English historical translation of Molokhovets recipe No. 4056 from the 1901 Russian cookbook, retaining original methods and measures.
Remove the spinal notochord tissue (vesiga) from sturgeon, wash and rub it clean, then hang it on a string.
When half dry, coil it like a skein of thread, tie and finish drying by the stove.
Historical editorial note: The historical drying process has no validated microbial safety or shelf-life parameters.
