No. 3884 — Soaked Cloudberries
English historical translation of Molokhovets recipe No. 3884 from the 1901 Russian cookbook, retaining original methods and measures.
Sort cloudberries, fill a large bottle and cover with water, tying a cloth over the mouth.
Alternatively wash and dry a small barrel, pour in about ½ glass rum and roll it so the liquid moistens all the inner surfaces.
Add the sorted cloudberries, cover with water, cork and seal with resin.
Related cloudberry preparations include preserves No. 3284 and nalivka No. 3410.
Historical editorial note: The historical soaking and barrel-storage procedure does not establish safe modern fermentation or preservation controls.
