No. 3758 — Keeping Cherries Fresh with Sugar
English historical translation of Molokhovets recipe No. 3758 from the 1901 Russian cookbook, retaining original methods and measures.
Layer sugar and ripe cherries in a jar until full, tie with animal bladder, coat with resin and keep on ice.
The author says this preserves their freshness and scent. Some add a little cognac or rum to the fruit and infused sugar when serving in winter.
