No. 3729 — Keeping Plums Fresh, Another Method
English historical translation of Molokhovets recipe No. 3729 from the 1901 Russian cookbook, retaining original methods and measures.
Pick as in recipe No. 3728 and immediately pack plums in glass jars, layering with cherry leaves; use small jars where the contents can be eaten at once.
Cover at once with animal bladder, seal with resin and store on ice.
Alternatively pack in small barrels with cherry leaves, seal thoroughly with resin and lower into a well until wanted.
Historical editorial note: Historical resin-sealed jars and submerged barrels do not ensure safe modern fruit storage.
Original source: Read Russian recipe No. 3729. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
