No. 3686 — Baking Soda with Cream of Tartar

English historical translation of Molokhovets recipe No. 3686 from the 1901 Russian cookbook, retaining original methods and measures.

For 1½ pounds flour use 1 heaped teaspoon bicarbonate of soda and 3 heaped teaspoons cream of tartar, adding them just before the dough goes into the oven.

The later Russian note identifies cream of tartar as potassium hydrogen tartrate, used together with soda to leaven dough.
