No. 3506 — Beetroot Coffee
English historical translation of Molokhovets recipe No. 3506 from the 1901 Russian cookbook, retaining original methods and measures.
Wash beetroots thoroughly, scrape clean with a knife, rinse again and cut into small square pieces.
Dry the pieces in an oven, roast as for chicory and grind them immediately while still hot.
Store in a covered jar. The author says the flavour improves the longer it is stored.
