No. 3363 — Wild Strawberry Syrup
English historical translation of Molokhovets recipe No. 3363 from the 1901 Russian cookbook, retaining original methods and measures.
For every 3 glasses sorted wild strawberries take 2 pounds fine sugar. Layer both in a glass jar, starting with sugar.
Keep in the shade for no longer than ten hours. Pour over clean muslin tied to an overturned stool and let drain for about three hours.
Fill small dry bottles, tie their mouths with animal bladder, and stand them in a cauldron of cold water, protecting them from knocks with hay or straw.
Boil the surrounding water for fifteen minutes from the time it begins to boil.
Historical editorial note: Historic animal-bladder covers and straw-packed water-bath processing are not equivalent to validated modern canning.
