No. 3342 — Lemon Cider or Sherbet for Tea

English historical translation of Molokhovets recipe No. 3342 from the 1901 Russian cookbook, retaining original methods and measures.

For 1 pound sugar take 5 lemons. Rub the sugar over the lemons to pick up zest, squeeze the juice and mix with finely pounded sugar.

On the following day bring to the boil three times in a preserve pan, skimming, then cool and transfer to a jar.

The source says a properly cooked syrup should set and crystallise. It is taken by the spoonful with water or tea; many people who drink tea take it by the bite instead of ordinary sugar.
