No. 3303 — Raspberry Jelly
English historical translation of Molokhovets recipe No. 3303 from the 1901 Russian cookbook, retaining original methods and measures.
Press the juice from raspberries, allow it to settle and pour off the clear liquid. Separately cook green gooseberries and strain.
Mix ½ glass gooseberry juice with 1 glass raspberry juice and 3 glasses fine sugar.
Cook in the usual way until halfway between the two measurement marks.
