No. 3267 — Kumanika Blackberry Preserve

English historical translation of Molokhovets recipe No. 3267 from the 1901 Russian cookbook, retaining original methods and measures.

Rinse 1 pound kumanika berries and drain in a sieve. Boil syrup from 2 pounds sugar and 1 glass water, add the fruit and cook, skimming the foam and shaking the pan.

When the fruit has become plump, remove from the heat and cool.

The Russian source includes an editorial explanation that kumanika denotes an upright blackberry, unlike the creeping dewberry. Its branched clusters hold many small berries, generally smaller than creeping blackberry varieties.
