No. 3257 — Strawberry Preserve

English historical translation of Molokhovets recipe No. 3257 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare strawberries as for raspberries by the fourth method in the general note, or following recipe No. 3256, with these differences.

Carefully trim off the green leaves but leave a stem about ¼ vershok long. Dip each berry in spirit or white rum, lay on a dish, sprinkle with one-quarter of the allotted sugar and keep on ice.

Next day make a syrup from 1 glass water and 2 pounds sugar per pound berries. Bring to a boil, add the berries and boil three times, taking the preserve pan off the heat each time, carefully skimming and gently shaking it.

Finish over low heat until the berries lose their sharp acidity and a film begins to form on the syrup.

Historical editorial note: The historical alcohol-dipping technique and shelf-life implications are not validated modern preservation guidance.
