No. 3256 — American Raspberry Preserve
English historical translation of Molokhovets recipe No. 3256 from the 1901 Russian cookbook, retaining original methods and measures.
The author finds these berries harder to preserve because they are very delicate. Gather after several days of good weather, first moisten the berries with spirit, then sprinkle with sugar.
Cook the following day as in recipe No. 3254, but use 2 pounds sugar for each pound of berries.
The original text says that a few drops of 'vitriol' would help retain firmness and colour, while warning against using too much.
Historical editorial note: Vitriol historically denotes potentially toxic metal sulfates or acids. NEVER add vitriol to food. This mention is preserved solely as an archival observation and must not be used for cooking. Alcohol treatment and storage claims are also historical.
Original source: Read Russian recipe No. 3256. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
