No. 3179 — Honey Gingerbread Cakes (Kovrizhki)

English historical translation of Molokhovets recipe No. 3179 from the 1901 Russian cookbook, retaining original methods and measures.

Beat 10 yolks and 5 whole eggs with a spatula until foamy. Separately beat 1½ pounds good honey with ½ teaspoon ginger and gradually combine with the eggs, beating continuously.

Add 1¼ pounds flour little by little and continue beating as long as possible. Transfer the batter into paper boxes, sprinkle with almonds and bake.

The final list gives 10 yolks, 5 eggs, 1½ pounds (2 glasses) honey, ½ teaspoon ginger, ½ glass almonds and about 4 glasses flour, enough for a batter as thick as for fritters.

To provide

½ teaspoon ginger.

½ glass almonds.

About 4 glasses flour, enough for a fritter-like batter.
