Beat ¼ pound butter until white over ice. Rub together 3 cups sugar, zest and juice of 1 lemon, 4 yolks, 5 cups fine flour, 2 cups milk and 6–8 crushed bitter almonds.

Fold in 4 beaten whites, then sift in 2 teaspoons cream of tartar and 1 teaspoon sodium bicarbonate. Mix gently and place immediately into a hot oven for only 20–30 minutes.

The closing ingredient list specifies ¼ pound unsalted butter, 2 cups sifted sugar, 1 lemon, 6–8 bitter almonds, 4 eggs, 2 cups milk, 5 cups fine flour, 2 teaspoons cream of tartar, 1 teaspoon sodium bicarbonate, plus ½ tablespoon butter and 2–3 rusks for preparing the mould.
