No. 2826 — Krupenik with Farmer’s Cheese (Supplement to Section XVII)

English historical translation of Molokhovets recipe No. 2826 from the 1901 Russian cookbook, retaining original methods and measures.

Rub 1½ pounds of the freshest pressed tvorog (farmer’s cheese) through a sieve. Mix with ½ glass of uncooked semolina, a level teaspoon of salt, 2 whole eggs, 1 tablespoon of butter and 2 glasses of milk. Bake in a sauté pan.

Buckwheat groats may replace semolina; in that case the milk may be replaced with 2 glasses of very fresh sour cream.
