No. 2779 — Small Open Pies with Preserves or Apples (Vatrushki)

English historical translation of Molokhovets recipe No. 2779 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare fasting yeast dough as in recipe No. 2769, or simple noodle dough enriched with 1 tablespoon of sunflower oil and 1 tablespoon of rum or vodka.

Roll out small rounds, put drained preserves or baked, sieved apples sweetened with sugar in the centre, and pinch up the edges in the customary vatrushki shape.

Alternatively peel and finely chop 8–10 apples and stew in a saucepan with ½ glass of sugar, 1 tablespoon of rum and 2–3 tablespoons of water for the filling.
