No. 2769 — Fasting Yeast Dough for Sweet Pies
English historical translation of Molokhovets recipe No. 2769 from the 1901 Russian cookbook, retaining original methods and measures.
For six people, early in the morning start a sponge from 1¼ glasses of warm water, 2 zolotniks of dried yeast dissolved first in a little warm water, and 2 glasses of fine wheat flour. Leave until risen.
Add 1 teaspoon of salt and beat thoroughly with a wooden paddle. Stir in about 2 tablespoons of poppy-seed, sunflower or olive oil rubbed with ½ glass of sugar. Flavour with 10 cardamom seeds, lemon zest, 2–3 drops of rose or lemon oil, vanilla drops or cinnamon.
Add the remaining flour and knead, using 1½–2 pounds of flour altogether. Once risen, shape a round pie with a raised rim, cover with apples or another filling, decorate with strips of dough and leave to rise again.
Brush with honey diluted with water and bake in the oven.
