Prepare the melon mixture according to jelly No. 1979, reducing the liquid to 3 glasses before making the mousse.

¾ pound of melon. ¾ glass of French white wine. | ½ pound of sugar and ⅓ lemon. 5 zolotniks of isinglass. |
