No. 2681 — Rice Cutlets with Green Peas
English historical translation of Molokhovets recipe No. 2681 from the 1901 Russian cookbook, retaining original methods and measures.
Rinse 1½ glasses of rice in cold water, boil in water with salt and allow to cool. Form small cutlets, dust with flour and fry in oil according to the method in recipe No. 1772.
Serve with green peas from recipe No. 511.
