No. 2620 — Rice with Strawberry Purée
English historical translation of Molokhovets recipe No. 2620 from the 1901 Russian cookbook, retaining original methods and measures.
Cook rice with pieces of vanilla and arrange it on a serving platter in a ring, leaving the centre hollow. Smooth the rice evenly around the edge.
For the purée, pick over 2 pounds of strawberries, about 5 glasses, rub them through a sieve and add ½–¾ glass of fine sugar. Stir well and pour into the centre of the rice ring.
To provide
1 glass of rice. ¾ vershok of vanilla. | 2 pounds of strawberries, about 5 glasses. ¾–1 glass of sugar. |
