No. 2610 — Vinaigrette of Potatoes, Salmon and Herring
English historical translation of Molokhovets recipe No. 2610 from the 1901 Russian cookbook, retaining original methods and measures.
Cut about 30 boiled potatoes into small cubes. Similarly dice 1 pound of salmon and 2 herrings. Add 1 tablespoon each of capers and olives, some black pepper, chopped green onions and 2–3 ordinary onions.
Mix all ingredients and pour over mustard sauce.
