No. 243 — Semolina for Broth

Complete English translation of Molokhovets recipe No. 243 from the 1901 Russian cookbook, retaining original quantities, preparation and source.

Sprinkle ½ glass of semolina into the broth, bring to the boil two or three times and serve.

To avoid clouding the stock at all, first sprinkle the semolina into salted boiling water, bring once to the boil and strain. Add to the boiling broth and let it return to the boil another two or three times.

Original source: Read the Russian recipe No. 243. The quantities and historical terminology of the 1901 book are retained. See the measurements guide; period preparation and storage methods are not modern food-safety instructions.
