No. 2346 — Fresh Mixed-Berry Soup

English historical translation of Molokhovets recipe No. 2346 from the 1901 Russian cookbook, retaining original methods and measures.

Sort fresh berries so at least two pounds remain, including roughly half a pound each raspberries, wild strawberries, blackcurrants and redcurrants.

Boil six glasses water with sugar, honey or molasses and about two vershoks cinnamon.

Thicken with a spoonful potato starch and bring to a boil.

Pour the boiling liquid over the berries arranged in a soup tureen, mix, cover and stand a quarter hour on the edge of the stove to keep warm. Serve.

To provide

3 pounds berries

½–1 pound sugar

Or ½ pound honey or molasses

Cinnamon, about 2 vershoks

Historical editorial note: The original calls for three pounds in its supply list but at least two pounds after sorting in the method.
