No. 2317 — Mushroom Soup with Pearl Barley
English historical translation of Molokhovets recipe No. 2317 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare as in mushroom and rice soup No. 2316, but replace the rice with half a glass pearl barley.
Cook the barley separately until soft and beat until pale with a spoonful butter or other fat before adding.
