No. 2261 — Fresh Cucumbers with Provençal Dressing
English historical translation of Molokhovets recipe No. 2261 from the 1901 Russian cookbook, retaining original methods and measures.
Peel cucumbers, cut into the thinnest possible slices and sprinkle with salt.
After one hour pour off the liquid, add two or three spoonfuls Provençal olive oil, vinegar, pepper and dill.
Mix and serve.
