English historical translation of Molokhovets recipe No. 1841 from the 1901 Russian cookbook, retaining original methods and measures.
Make and roll out pastry No. 1831.
Peel three pounds apples, rubbing immediately with lemon to prevent browning, core and chop finely.
Put into an enamel pan with one glass sugar and just one or two spoonfuls water. Heat while stirring only until the apples soften, then cool.
Spread filling over one pastry sheet, cover with another and crimp the edges evenly.
