No. 1831 — Shortcrust Pastry with Baking Soda

English historical translation of Molokhovets recipe No. 1831 from the 1901 Russian cookbook, retaining original methods and measures.

Combine a quarter pound sour cream and a quarter pound butter with one and a half yolks and half an egg white.

Add a quarter glass sugar, half a tablespoon cream, four or five crushed cardamom seeds, an eighth teaspoon salt, a full teaspoon potato flour and half a teaspoon baking soda.

Add enough additional flour to keep the dough from becoming overly firm.

Beat or knead for about half an hour, then roll as required.
