No. 1803 — Wine Wafer Rolls
English historical translation of Molokhovets recipe No. 1803 from the 1901 Russian cookbook, retaining original methods and measures.
Mix three quarters glass flour, half a glass fine sugar, three quarters glass light table wine and three beaten egg whites until smooth.
Bake and shape into thin wafer rolls, using the general wafer method and a piece of white wax as the original lists.
Fill with jam or whipped cream flavoured with lemon zest, vanilla or cinnamon.
The proportion yields about thirty-five rolls.
For a meatless version omit egg whites and add two spoonfuls good vegetable oil instead.
Historical editorial note: The original lists one glass thick cream, four sugar lumps and a lemon's zest or vanilla or cinnamon for the filling, alternatively one glass jam.
