No. 1709 — Vermicelli or Noodles Layered with Meat and Eggs

English historical translation of Molokhovets recipe No. 1709 from the 1901 Russian cookbook, retaining original methods and measures.

Boil three quarters pound vermicelli or homemade noodles No. 1707 in salted water, drain and rinse cold. Mix with one or two spoonfuls butter and one egg.

Finely chop one and a half pounds beef cooked in broth. Fry a chopped onion in butter, then add beef and fry briefly.

Butter a mould, dust with uncooked vermicelli and leave to cool.

Layer cooked noodles, beef filling, more noodles and minced hard-boiled eggs, repeating until the mould is full.

Bake in the oven and serve in the mould or unmould onto a dish.

To provide

1½ pounds beef and 1 onion

5–6 eggs and 1½–4 spoonfuls butter

½ pound Italian vermicelli

Or for homemade noodles: 2 eggs and 2 glasses flour

Historical editorial note: The method calls for three quarters pound vermicelli, but the supply table lists half a pound.
