No. 1412 — Scalded Pastry without Yeast

English historical translation of Molokhovets recipe No. 1412 from the 1901 Russian cookbook, retaining original methods and measures.

Boil 1¼ glasses of water with half a glass of butter, then immediately add 1½ glasses of flour and stir smooth.

While still hot beat in four eggs, preferably four yolks, and add salt and enough additional flour.

Immediately make eighteen to twenty little pies, using no more than a spoonful of extra flour for dusting, or use the dough to cover a pâté.

Put directly into the oven; this pastry should not be brushed with egg.

To provide

⅜ Russian pound of butter and 3 glasses flour

4 eggs and salt

Historical editorial note: The recipe calls for half a glass of butter in the method but lists ⅜ pound in the ingredient table.
Original source: Read Russian recipe No. 1412. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
