No. 1319 — Pike Spit-Roasted under Pork Fat
English historical translation of Molokhovets recipe No. 1319 from the 1901 Russian cookbook, retaining original methods and measures.
Clean and salt the pike, cover in thin slices of one Russian pound of pork fat, bind with threads and roast on a spit, continually basting with the juices.
Serve with a salad.
