No. 13 — Oyster Broth for the Sick
An English translation of original recipe No. 13 from Elena Molokhovets’ Russian cookbook (1901), with historical quantities and Russian source.
Take eight oysters out of their shells, breaking the shells to remove them. The author says to discard the black, pouch-like internal part at the bottom, cut the oysters into small pieces, rinse them in warm water and cook them in 2½ glasses of water.
Historical editorial note. This period sickroom food is not modern medical or shellfish-safety guidance.
Source and context: Original recipe No. 13 is preserved in the Russian 1901 edition. The historical quantities have not been modernized. For interpretation of units see historical measurements; modern food-safety standards take precedence.
